The Easiest Peanut Butter Cookies

I love peanut butter. Really, really love peanut butter. I would estimate that peanut butter and fro yo make up about 50% of my daily caloric intake. When I read this recipe, I became obsessed. There was no stopping me from making it, other than the fact that I had no eggs in my refrigerator. Now that that particular problem has been remedied, viola: the easiest peanut butter cookies.

Flourless Peanut Butter Cookies
Adapted from Life. Love. Cupcakes.

1 cup granulated sugar
1 egg
1 tsp. baking soda
1 cup peanut butter
2 tbsp. cocoa powder (optional)

Melt peanut butter in microwave for about 20 seconds to soften. Add egg and mix well. While still stirring, add the sugar and the baking soda. Continue mixing until well combined. Place in freezer for 10 minutes. Roll small balls of dough in extra sugar, place on a cookie sheet and use a fork to make criss-cross patterns. Bake at 350 degrees for 9-10 minutes.
